Who doesn't like food on a stick with sprinkles?
Author:Rebecca Perrera
2 bananas, peeled and cut in half
1/4 cup jam or preserves
1/2 cup smooth peanut butter
1/4 cup coconut oil
Optional: Sprinkles, mini chocolate chips, granola
Push an Popsicle pop stick in the center of each piece of banana. Stir the jam to loosen, then brush it all over each banana. Place the bananas on the lined plate and freeze until solid, about 2 hours.
To make the peanut butter magic shell, combine the peanut butter and coconut oil in a microwave-safe medium bowl, and microwave for 30-second increments, stirring after each, until smooth and runny. Let cool at room temperature for a few minutes.
Magic shell will store in the fridge for 1 week. To use, reheat for 30 seconds in the microwave.
Once the bananas are frozen dip the frozen bananas in the peanut butter magic shell. Before the shell forms on the cold bananas cover the banana with sprinkles.
Serve immediately, or refreze for a delicios afternoon snack.
Peanut Butter Magic shell can also be found in your grocery store with the ice cream toppings.
