Spinach is a very nutritious and versatile vegetable to add to many dishes. It can be cooked on it's own or "hidden" in a soup or main dish.
Eating spinach may benefit eye health, reduce oxidative stress, help prevent cancer and reduce blood pressure levels.
It is high in Vitamin A, C & K1. It also has plenty of Folic Acid, Iron and Calcium. Add some more to your meals today!!

This crockpot Tuscan Chicken is drenched in a creamy sauce loaded with great Mediterranian flavors. It's one easy and delicious meal to make ahead.
Great additions could be - Zucchini, yellow squash, onions, eggplant, bacon bits - all added when you start the crockpot.
6-8 boneless skinless chicken thighs or breasts
3 garlic cloves, chopped
3 Tablespoons butter
1 1/2 cups cream
1/2 cup chicken broth
3/4 cup Parmesan cheese
1/2 cup sundried tomatoes, chopped or cut in strips
1 Tablespoon Italian Seasoning
3-4 cups spinach
1/2 teaspoon red chili flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1 Tablespoon oil
Season the chicken with salt, pepper and chili flakes. Heat oil and 1 Tblspn butter in a pan on medium heat. Add chicken and cook for 5-6 minutes. Flip and cook an additional 3-4 minutes. Then transfer to the crock pot.
In the same pan, add 2 Tblspn butter and garlic to saute for 30-40 seconds. Add in cream and chicken broth to cook for 3-4 minutes. Stir in parmesan cheese and Italian seasonings - cook for 1 minute. Add sun dried tomatoes and cook for 1 minute.
Pour the sauce over the chicken in the crockpot. Spread well. Cover and cook 3-4 hours on High or 6-8 hours on Low.
Once the chicken is tender and cooked add the Spinach and mix well in the sauce. Cover and cook until spinach is wilted.
Serve on pasta, mashed potatoes, or zucchini noodles
Also, for those of us who don't want the extra steps - you can put the raw chicken and all ingredients in the crockpot and just let it cook for the hours. Doing the pre-cooking just gives the dish more flavor.
