Every time I get fresh dates in my CSA basket at the local farm near me, I get excited. They might look like a large raisin, but they are much softer in texture and sweeter. Dates are incredibly versatile (In fact, we have already done 2 other recipes on this blog! Check out these cookies and this shake)
One of my go-to recipes for meal planning is date and nut energy balls. My favorite recipe is a copy-cat of the Cashew Cookie Larabar. Simply use a food processer to blend equal parts roasted cashews and dates (pitted). Once the mixture is thoroughly chopped, use a cookie scoop to scoop portions. roll portions into balls and store in the fridge.
The natural sugar and fiber in the dates and protein and healthy fat in the cashews make for a nutritionally dense snack. These balls will keep you fueled up and satisfy those snack cravings.
Starting with these 2 ingredients, you can expand your flavors with other dried fruits, nuts, cocoa nut, and chocolate chips. The picture below are my energy balls made with pecans and dates and rolled in crushed graham crackers. It tastes like a pecan pie!
