Summers are HOT in Arizona. By the time July comes around, I am praying for monsoons and looking for any recipe to feed my family that does not heat up the kitchen. That's where this breakfast popsicle made with yogurt, fruit, and granola saves the day (or summer). I love this breakfast popsicle recipe because:
1. Like most of my recipes, it is completely customizable using what you have on hand.
2. My kids love it because they think I offered them desert for breakfast (or snack).
3. It is a balanced meal with protein and fat from the greek yogurt and carbohydrates from the granola. These keep my kids full while they play.
This week at the farm stand I was excited to see local Arizona Strawberries. As a native Arizonan, I didn't know that there are strawberry farms in Phoenix, Arizona! These little strawberries pack huge flavor and are perfect for these popsicles.

Creamy and balanced summer snack on the go!

1 Cup greek yogurt (I used plain full-fat yogurt)
1/4 cup canned coconut milk
1 tablespoon honey (to taste)
1-2 heaping tablespoons Fruit Preserves
Granola
Diced fresh fruit (optional)
Combine yogurt, honey, and coconut milk in a bowl
Gently fold fruit preserves into yogurt mixture
Layer yogurt mixture, granola, and fruit in popsicle molds
Freeze popsicles 4-6 hours or until set
