We are coming to the end of beet season but we still have a delicious selection of red or golden beets. The golden beets are sweeter than the red ones. They both have delicious flavor. Many people say "they taste like dirt" but not our beets. They are yummy! Here are three ways to try out beets, red or golden.
Beet Fries
I don't know why I never thought of this but they are excellent cooked in the oven. Peel and cut the beets in half and then cut in 1/2" strips. (wear gloves to keep from staining your fingers). Then toss in bowl with 1 Tablespoon oil, salt and pepper to coat the beets. Put parchment or foil down on your cookie sheet. Then spread out the beets and bake for 20-30 minutes at 425 or until tender.
Grilled Beets
We are enjoying the weather and are grilling like crazy right now. Why not throw the beets on the grill?
Wash and peel beets and then dice. Toss the beets in a bowl with 1 Tablespoon oil, 2 teaspoons Italian seasonings, salt and pepper. Place the beets on foil and create a "pocket" with the foil. Place the packet on the grill for 35-50 minutes (depending on size of beets and heat of grill). They are done when tender. To serve, add some crumbled feta on top.

6 cups green leaf lettuce - like romaine
1/2 cup thinly sliced carrots
1/2 cup halved Cherry tomatoes
1/4 cup peeled and thinly sliced raw beets
1/4 cup thinly sliced turnip
1/4 cup thinly sliced radishes
3 Tablespoons sunflower Seeds
2 Tablespoons raisins or golden raisins
1/4 cup cheese - goat cheese, mozzarella or feta - thinly shaved
1 apple, sliced
1 tangerine or mandarin, peeled and segmented
1/2 cup apple cider vinegar
1/2 teaspoon dijon mustard
2 Tablespoons maple syrup or honey
1/2 Tablespoon minced shallot or green onion
1/3 cup olive or grapeseed oil
3 Tablespoons olive oil
1/2 teaspoon sea salt
To make the dressing: combine vinegar, mustard, syrup/honey, onion into blender and pulse until incorporated and shallot/onion is liquefied. Then slowly add in oils. Add salt and then flavor with more sweet sauce, if needed
Assemble the salad and toss with dressing
